We can’t get enough zucchini recipes this time of year. Instead of the usual squash casserole, change things up a bit by turning this summer veggie into pasta! Using a simple vegetable peeler turns any veggie into pasta-like strands.
If you don’t like mushy vegetables, you might want to give this a try. A quick saute before the zucchine goes limp, gives you that pasta-like bite. Since this vegetable is very mild, you can any additions or simply serve with your favorite pasta sauce. “BeMindful.BeHuman” added regular pasta to the zucchini strands and could barely taste the zucchini!
