In the ideal world, you’ll think about making this soup the day before, or at least several hours in advance – time enough to soak and cook the beans.

“Lisa’s Kitchen” adapted this recipe to make it a vegetarian delight. Onion Soup is an utterly delicious thing. Served piping hot with toasted croutons or bread with a layer of melted cheese, this is usually the soup people seek when they go to restaurants.  Fresh arugula and a combination of wines add additional flavor to this slow-simmered soup recipe.  Make it the ideal way – if you have time.
