I grew up with my mother making this dish on “no meat” Fridays’ during Lent. We would have these crispy-on-the-outside, tender-on-the-inside pancakes with chilled applesauce. They make a delicious appetizer.

This potato latkes can also be a vegetarian main course – they are that good! These are traditional served during the Jewish Holidays, but you don’t have to celebrate these holidays to appreciate the goodness of a good potato pancake!  These are associated with many European traditions including Poland, Germany and Hungary.
