Every one loves meatloaf. It’s a comfort food that just says “Home”. Most of us have our tried and true family recipes.
This meatloaf recipe is more of an Italian style version. Porcini mushrooms are added to the beef mixture to give a more intense flavor. The first time I tried porcini mushrooms was in a mushroom risotto and have used them ever since. Cubes of mozzarella are mixed in with the meat you get a burst of cheese in every bite. Instead of the traditional ketchup topping, this recipes calls for breadcrumbs and herbs with a little more cheese.
