Cauliflower – the unloved vegetable is great for pickling because of its firm texture and form. It’s always found in the Italian Giardiniera (pickled vegetables) which is served with most Antipasti.
In this recipe from “BemindfulBeHuman”, they take the guess work out of making these easy pickles. The vegetables have the perfect texture and remain crisp when using this method. Garlic and red pepper flakes gives this a condiment a little kick and is great served with sandwiches or simply as a snack. Crunchy pickled cauliflower is fun to eat and the acids and spices liven up what can be a pretty boring raw vegetable.
